CANADA - A food scientist with the University of Manitoba suggests a recent report by the cancer agency of the World Health Organization has hurt its credibility, writes Bruce Cochrane. A report released in October by the International Agency for Research on Cancer labeled red meat as probably carcinogenic and processed meat as carcinogenic to humans. Dr Rick Holley, a food safety and food microbiology professor with the University of Manitoba, notes the recognition that the agency did not consider new evidence and that this is a new opinion rather than results of new research has impacted the acceptance of the report.
